What would a barbecue or a picnic be without a bowl of potato salad? In New Zealand this creamy potato dish is almost mandatory whenever there’s an occasion that involves casual eating and drinking with friends. Learn how to make potato salad with the delicious recipes below.

Traditional Potato Salad

This traditional potato salad is a prefect accompaniment to barbecued meat or cold roast chicken.

Ingredients:

  • 1 kg potatoes
  • 1 small red onion very finely sliced
  • 4 rashers bacon
  • 3 shallots (spring onions) chopped
  • 1 cup mayonnaise
  • 1/3 cup balsamic vinegar
  • 1 tablespoon brown sugar

Method:

  1. Peel the potatoes and cut into 2cm cubes (you can leave the potatoes unpeeled if you prefer – doing so will actually add more taste and texture to your potato salad). Place in a saucepan of cold water, bring to the boil and cook until tender. Note: don’t overcook your potatoes as this will cause them to fall apart when you mix them with the other ingredients.
  2. Drain the potatoes and set aside to cool thoroughly.
  3. Dice the bacon and fry till crispy.
  4. In a large bowl mix the sugar and vinegar together.
  5. Add the cold potatoes and mix gently to coat.
  6. Add the red onion, the shallots, the bacon and the mayonnaise and combine.

Tip: Make sure your potatoes are properly cold before you add mayonnaise to them. If they are still warm the mayonnaise will melt and lose its texture and colour.

You can vary this potato salad recipe by adding two or three chopped hard-boiled eggs. Leafy green herbs like parsley, coriander and basil also go well in potato salad.

Vegetarian Potato Salad with Dill

Here’s a great recipe if you want to avoid bacon.

Ingredients:

  • 1 kg potatoes
  • 1 ½ cup mayonnaise
  • ½ cup wholegrain mustard
  • 1 bunch of dill
  • 4 shallots

Method:

  1. Cook and cube the potatoes.
  2. Chop the dill and the shallots finely and combine with the mayonnaise and the mustard.
  3. When the potatoes are cold add the mayonnaise mixture.

No Mayonnaise Potato Salad

Getting a bit tired of mayonnaise? Here’s a healthy alternative with an Italian flavour.

Ingredients:

  • 1 kg potatoes
  • ¾ cup of olive oil (extra virgin is best)
  • 3 cloves of garlic crushed
  • ½ cup of white wine vinegar
  • 1 cup of chopped flat parsley (you could substitute basil or coriander – adjust the amount to your taste).

Method:

  1. Cook and cube the potatoes (leaving the skins on works well for this recipe).
  2. Allow the potatoes to cool a little but don’t allow to get properly cold as this dish is best served slightly warm.
  3. Mix the oil, vinegar, garlic and parsley in a large bowl.
  4. Add the potatoes and coat with the mixture.
